Ingredients

Eggs and Prosciutto
- 3 Large eggs
- 1.5 tbsp Lactose-Free Cream Cheese
- 1 tbsp Lactose-Free Butter
- 2 slices of prosciutto
Roasted Red Potatoes
- 1 c Red potatoes
- 1 tbsp garlic and herb seasoning

Directions

For the scrambled eggs and cream cheese
1. Beat eggs and cream cheese together until smooth.
2. Add butter to pan and heat on medium heat until melted.
3. Add eggs and cream cheese to pan; scramble.
For the crispy prosciutto
1. Bake prosciutto on a lined baking sheet at 350 for 3-6 minutes until crisp.
For the roasted potatoes
1. Cut the potatoes in half.
2. Toss with seasoning.
3. Use cooking spray if needed.
4. Air fry on 390 for 15 minutes or until crispy.
For the plating
1. Plate with roasted potatoes, crispy prosciutto and serve with ketchup.
