For the sauce
- 2 Tbs Avocado oil
- 0.5 Onion, chopped
- 2 clove Garlic, chopped
- 1 tsp Smoked paprika
- 0.5 tsp Cumin
- 2 tsp Dried thyme
- 0.5 tsp Fresh black pepper
- 2 habanero peppers
- 0.5 cup Apple cider vinegar
- 0.5 cup Orange juice
- 0.33333333333333331 cup Brown sugar
- 0.25 cup Ketchup
- 1 Tbs Worcestershire sauce
- pinch Salt
For the ribs
- 1 tsp salt and fresh black pepper
- 0.5 tsp Cumin
- 1 tsp Smoked paprika
- 1 rack pork ribs (around 600g)
- 2 can Lager beer

For the sauce
1. Heat the oil in a pot and add the onion and garlic. Cook until they start to brown lightly. Add the spices and habanero pepper, mix well and crush to break the peppers. Pour in the vinegar, juice, brown sugar and ketchup, whisk to incorporate. Bring to a boil and blend until you get a homogenous and smooth sauce. Return to the pot and cook on low heat for 5 minutes or until it thickens and reduces lightly. Season with Worcestershire sauce and a pinch of salt.
2. Place to the side.
For the ribs
1. Pre-heat your oven to 180°C/350°C.
2. Mix the spices with salt and pepper. Rub the ribs with this mixture and place on top of a rack on a deep, baking or roasting tray. Pour the beer into the tray so it doesn’t touch the ribs and cover with foil. Bake for 45 minutes or until tender. Remove from the oven, uncover and remove all the liquid. Brush with the sauce you made and bake again for 20 more minutes or until glazed.
3. Brush with more BBQ sauce while they bake.
4. Slice the ribs or serve the full rack in a large plate with your favorite sides.
