Shrimp Stir Fry
- Shrimp, fresh, peeled and de-veined
- Garlic, chopped
- Coconut oil
- salt and pepper
- vegetables
- Ginger, freshly grated
- 0.5 c buckwheat noodles
- Sesame oil
- Coconut aminos
- Scallions
- sea salt

For the shrimp
1. In a pan over moderate heat, sauté fresh peeled and de-veined shrimp with chopped garlic in coconut oil until the shrimp are cooked through.
2. Season the shrimp with salt and pepper to taste.
For the vegetables
1. Roughly chop your vegetables of choice. For a quick option, you can use pre-packaged bagged cabbage and snap peas.
2. Lightly stir-fry the chopped vegetables in the same pan with freshly grated ginger.
For the noodles
1. Add the cooked buckwheat noodles to the pan and continue to stir-fry until everything is well combined.
2. Lightly drizzle sesame oil over the stir-fry for added flavor.
3. To enhance the taste, add coconut aminos to the mixture.
For the garnish
1. Garnish the dish with sliced scallions.
2. For a finishing touch, sprinkle sea salt over the stir-fry.
3. Mix everything well and serve immediately.
