Catfish Filets
- 4 catfish filets
- 0.25 c Yellow Mustard
- Tony's Chachere's
- 2 c Canola oil
- 0.75 c corn meal
- 0.5 c Flour
- 4 tbsp Cornstarch

Cleaning and Preparing the Catfish
1. Start by cleaning your catfish in water and vinegar.
2. Rinse and pat dry.
3. Add a thin layer of yellow mustard on the front and back of your catfish.
4. Season with your choice of seasoning on both sides.
Mixing the Dredge and Coating the Catfish
1. Mix cornmeal, flour and cornstarch as well as some more seasoning together.
2. Dredge your catfish fillets front to back and make sure you get flour dredge in all of the crevices.
3. Let your fillets sit for about 10 minutes before adding them to the hot oil.
Cooking the Catfish
1. Your oil should be at 350° F before dropping the fillets in.
2. Cook your fillets until golden brown on each side. Use a fish spatula to help you flip so that you do not break your fillets.
3. Once your fillet is finished cooking, remove from the heat and drain on a wire rack or paper towel.
Serving the Catfish
1. Serve with your favorite side dishes like grits and vegetables.
2. Add lemon butter sauce or hot sauce.
3. Enjoy!
