Ingredients

- 1 Tbs Avocado oil, or ghee
- 0.25 cup Red onion, diced
- 6 Large eggs
- 0.125 tsp fine sea salt
- 2 Tbs Capers, drained
- 3 oz smoked salmon
- 0.25 cup Cream cheese, can be nondairy, check ingredients for Whole30
- 1 Tbs everything spice mix
- freshly ground black pepper

Directions

1. Add the avocado oil to a 10" nonstick skillet and place over medium heat.
2. Once the fat is hot, add the diced onion and saute until softened, stirring occasionally, for about 5 minutes.
3. Meanwhile, beat the eggs with the salt and some freshly ground black pepper. Stir in the drained capers.
4. Once the onions are soft, add the eggs to the pan. Stir everything around so the onions and capers are distributed evenly. Rip off small pieces of the salmon and place throughout the frittata, also distributing evenly, pushing down gently so they don't stick up too much. Use a spoon to add little blobs of cream cheese throughout the frittata in the same way.
5. Cover and turn the heat down to medium low to let the bottom and edges of the frittata set. Turn on your broiler.
6. Uncover and broil for 2 minutes, rotate the pan 180 degrees and broil for 2 more minutes, or until the top is set and a knife gently pushed into the middle comes out clean.
7. Remove from the broiler and sprinkle the everything spice mix. Let the frittata rest for 5 minutes so it fully sets before slicing and serving.
