- 4 ears of corn
- 1 tbsp Avocado oil
- 0.25 c Mexican crema
- 0.25 c Mayonnaise
- 0.5 Lime, zest and juice
- 0.5 c cotija cheese
- 1 tsp Chile powder, more for garnish
- 1 clove Garlic, minced
- 0.25 c Cilantro, chopped plus more for garnish
- 1 tbsp Healthy Rican Sofrito

Preparation of Corn
1. Preheat an outdoor grill or grill pan to medium heat.
2. Peel the ears of corn, rinse with water, dry and rub each ear with the oil.
3. Place the corn on the grill and cook until it is evenly charred on all sides.
Preparation of Crema Mixture
1. In the meantime, make the crema mixture.
2. In a large bowl, mix together the crema (sour cream), mayonnaise, lime zest and juice, cotija cheese, chili powder, garlic and cilantro or Healthy Rican Sofrito as an alternative.
Final Steps
1. After cooking the corn for about 10 minutes, remove from the grill and roll each cob in the crema mixture and place on a large plate or platter.
2. Garnish with additional cheese, cilantro, chile powder, or Healthy Rican Sofrito.
3. Serve with lime and hot sauce if desired.
