Ingredients

- 6 Large eggs
- 1 ear of corn
- 1 tbsp Butter
- 2 tsp Elote seasoning
- 0.333 c Mayonnaise
- 0.25 c cotija cheese
- 1 Lime, zested
- 1 tbsp Lime juice
- 1 tsp Dijon mustard
- 0.25 tsp Black pepper
- 2 tbsp Cilantro, chopped

Directions

Boiling the eggs
1. Bring a pot of water to a boil.
2. Carefully lower eggs with a spoon.
3. Boil for 10 minutes.
4. Turn off the heat, cover and let sit for 10 minutes.
5. Uncover, drain and run under cold water.
6. Set aside to cool.
Preparing the corn
1. Cut kernels off the cob and place in a bowl with the butter and 1 teaspoon Elote seasoning.
2. Cover and microwave for 1 minute and 30 seconds.
3. Give it a stir and allow to cool.
Preparing the filling
1. Peel eggs, cut in half and remove yolks, placing them in a bowl.
2. Add mayo, cotija, lime zest, lime juice, mustard, remaining 1 teaspoon Elote seasoning and black pepper.
3. Mash with a fork until smooth.
4. Stir in 3/4 of the corn and the cilantro.
5. Transfer to a bag and pipe into the egg whites.
Final touches
1. Top each with more cotija, remaining corn, cilantro leaves and a bit more Elote seasoning.
2. Chill and serve.
3. Enjoy!
