- 2 Tbs Olive oil
- 1 Large eggplant, peeled and in small cubes
- pinch salt and fresh black pepper
- 0.5 cup Breadcrumbs
- 0.25 cup Parsley leaves, washed, disinfected and chopped
- 3 clove Garlic, chopped
- 2 tsp Oregano
- 1 Egg
- 0.5 cup Wheat flour
- 0.5 cup Vegetable oil
- 1 cup Water
- 1 Egg yolk
- 0.5 Lemon

1. Preheat you oven to 180ºC/350ºF
2. Heat the olive oil in a pan and cook the eggplant until it softens, add salt and pepper to taste. Transfer to a bowl and mix with the breadcrumbs, parsley, garlic, oregano and egg until its homogenous. With your hands, form small meatballs and coat with flour. Fry in a pan at medium heat until they are golden brown.
3. Transfer the meatballs to a pot with water and a tbsp of water. Let them boil with the lid on for 5 minutes. In a bowl, whisk the egg yolk with the lemon juice and pour into te pot, stirring constantly. Let it simmer for 1 minute or until the sauce starts to bubble.
4. Serve immediately and enjoy.
