- 300 ml Cream, (for whipping, should be cool)
- 200 ml Mascarpone cheese
- 60 grams Sugar
- 1 tsp Vanilla extract
- 18 Ladyfinger biscuits
- 250 ml Coffee, decaf or regular
- 1 tbsp Unsweetened cocoa powder

Prepare the coffee
1. Prepare 250 ml of coffee in a shallow bowl and let it cool.
Whip the cream
1. In a narrow bowl, whip the cream using an electric mixer until the peaks stiffen. This can take a couple of minutes.
2. The cream stiffens quicker if it comes right out of the fridge. A narrow bowl helps as well, as it contains the cream in a smaller space.
Prepare the cream mixture
1. Add mascarpone, sugar, and vanilla extract. Mix for a few seconds (you don't want the cream to get too stiff at this point). Put aside.
Prepare the ladyfingers
1. Dip one ladyfinger at a time in the coffee. Don't fully drown it, but rather dip the bottom side, then the top one for a quick second, and place it in your mold. Dip as many ladyfingers as needed to cover the bottom layer.
Assemble the dessert
1. Cover with half of the quantity of mascarpone-cream mixture.
2. Add another layer of coffee-dipped ladyfingers and cream.
3. Powder over cocoa powder.
4. The ladyfingers soak quite quickly so you can enjoy it shortly after, or let it rest in the fridge for longer.
