For the crunchy tofu
- 200 g tofu, extra firm, drained and diced
- 0.5 Tbs Olive oil
- 1.5 Tbs Cornstarch
- 1 tsp salt flower and fresh black pepper
- 1 tsp Nutritional yeast
For the sauce
- 1 Tbs Rice vinegar
- 1 Tbs Soy sauce
- 2 Tbs Water
- 1 Tbs Sriracha
- 1 Tbs Maple syrup
- 1 Tbs Cornstarch
For the stir fry
- 0.5 Tbs Sesame oil
- 0.5 cup Soybeans
- 0.5 cup Carrot, julienned
- 0.5 cup Red bell pepper, julienned
- 1 cup Broccoli, in florets
- 0.5 cup Red cabbage, sliced
- 2 cup Ginger, grated
- 2 clove Garlic, chopped

For the crunchy tofu
1. Pre-heat the oven to 220ºC/420ºF.
2. In a bowl, add the tofu cubes and mix all the ingredients to coat the tofu perfectly.
3. Place the tofu in a baking tray and bake for 10 minutes or until it’s golden and crispy; place to the side.
For the sauce
1. In a bowl, mix all the ingredients and place to the side.
For the stir fry
1. Heat the oil in a deep pan and sauté all the vegetables together for a couple of minutes, they should turn a bright color. Pour the sauce in and mix well until it thickens.
2. Stir the tofu into the pan and mix with the rest of the ingredients.
3. Serve hot and enjoy.
