Main Ingredients
- 1.5 lb Cod loin
- salt and pepper, to taste
- 0.25 c Extra virgin olive oil
- 1 tbsp Butter
- 2 Garlic cloves, smashed
- Rosemary, Sprig
- 2 lb Brussels sprouts
- 1 c Cherry tomatoes

Preparation of Brussels sprouts
1. Preheat your oven to 400F.
2. Slice Brussels sprouts in half and transfer them to a baking dish.
3. Now add a generous amount of extra virgin olive oil (about 4 tbsp) and sprinkle some salt.
4. Mix well before placing it in the oven for 20 minutes.
5. Toss in between for even roasting.
6. Add cherry tomatoes to Brussels sprouts 5 minutes before dishing out.
Preparation of Cod
1. Slice the cod in 4 even pieces.
2. Remove excess moisture by dabbing a dry paper towel.
3. Then sprinkle some salt and black pepper.
4. Time to fry the cod.
5. Add generous amount of EVOO to a pan and once hot, add the skin side down.
6. Let it cook on medium low heat for 4-5 minutes.
7. Flip and repeat until golden.
8. Then add whole crushed garlic cloves with sprig of rosemary.
9. Spoon that hot olive oil and butter all over the cod so it’s flavored all through.
1. Serve it with crispy baked Brussels sprouts and cherry tomatoes.
