Ingredients

For the grits
- 1.5 cup Grits
- 6 cup Chicken Broth
- 3 Tbs Unsalted butter
- 0.25 cup Heavy cream
- 0.5 cup Cheddar cheese
For the fry batter
- 2 cup All purpose flour
- 1 cup Panko breadcrumbs
- 0.5 cup Chicken Fry Seasoning
- 12 oz Club soda
- 1 Large egg
- Oil, for frying
For the shrimp
- 25 Shrimp, (save a few shrimp to fry for garnish)
- 1 tsp Kosher salt
- 1 tsp Black pepper
- 1 tsp Garlic powder
- 1 tsp Onion powder
- 1 tsp Smoked paprika
For the Creole sauce
- 1 Shallot, finely chopped
- 3 Bell peppers, orange, yellow, and red; chopped
- 3 Tbs Unsalted butter
- 0.5 cup White wine, to deglaze
- 0.25 cup Cherry tomatoes, chopped
- 0.5 cup Heavy cream
- 0.25 cup Cheddar cheese

Directions

For the grits
1. In a large pot, boil the chicken stock on medium heat
2. Once it starts to boil, add your grits.Turn your heat to low.
3. As the grits start to thicken, add heavy cream and stir.
4. Add butter and let cook until the grits get to your desired consistency.
5. Remove from the heat, add cheese, and stir. Let the grits sit for a few minutes.
6. Place the grits in a long pan and place in the refrigerator to sit overnight.
7. Place oil in a shallow pot and heat to 350 degrees.
8. Remove grits from the fridge and use a cookie cutter to cut your grits into circles.
9. Mix eggs, chicken fry seasoning, and club soda until you get a slight batter.
10. Dip the grits into flour, then chicken fry batter, and then finally into the panko bread crumbs.
11. Add grits to the oil and cook for about 4-8 minutes or until perfectly golden brown.
12. Add shrimp for garnish into the flour, chicken fry, and then panko.
13. Cook for 1-2 minutes or until golden brown.
For the shrimp
1. Turn your stove to medium heat.
2. Place enough oil in a large saucepan to cover the bottom of the pan.
3. Season your shrimp with salt, pepper, garlic powder, onion powder, and smoked paprika.
4. Once the pan gets hot enough, add the shrimp and cook for 2-3 minutes on both sides.
5. Remove the shrimp from the pan.
6. Add the butter to the pan and use a wooden spoon to remove the bits from the bottom of the pan.
7. Once the butter melts, add your shallot, tomatoes, and peppers. Cook until translucent.
8. Remove from the pan and add the white wine to deglaze.
9. Once the wine reduces, add your heavy cream.
10. Stir in the cheddar cheese and remove from the heat. Add peppers, shallots, and tomatoes back to the pan along with your shrimp.
11. To plate, place the fried grits on your plate, top with the shrimp and creole sauce, one or two fried shrimp, and some parsley. Serve immediately!
