- 2 c Quinoa, boiled, measured after cooking
- 2 Sweet potatoes, or 1 large
- 1 bunch of kale
- 2 c Chickpeas, boiled
- 2 clove Garlic
- 1 Red onion
- 1 Lemon, juiced
- 0.25 c Olive oil
- 0.5 tsp Salt, or to taste
- 0.5 tsp Pepper, or to taste
- 0.25 c Pumpkin seeds, toasted
- 1 c beetroot chips
- 0.5 vegan Feta cheese
- 0.25 c pumpkinseed oil
- 0.5 tsp cracked pepper

Marinating the red onion
1. Start by marinating the red onion in lemon juice and salt.
Preparing the sweet potatoes and kale
1. While the onion marinates, peel and chop the sweet potatoes into cubes.
2. Roast them in the oven at 395 degrees F with olive oil and salt until they are tender.
3. Next, de-stem and wash the kale, slice it into thin strips.
4. Sauté it in olive oil with salt until it’s wilted.
For the roasted chickpeas
1. Sauté garlic in olive oil over medium-high heat and season with salt and pepper.
2. Once the chickpeas are cooked, it’s time to assemble the bowl.
Assembling the bowl
1. Start by placing the cooked quinoa in the bowl, followed by the roasted sweet potato, sautéed kale, and roasted chickpeas.
2. Garnish the bowl with toasted pumpkin seeds, beetroot chips, crumbled vegan feta cheese.
3. Drizzle with pumpkinseed oil, and sprinkle with cracked pepper.
