- 2 oranges
- 1 Tbs Ginger, grated
- 0.5 cup Lime juice
- pinch salt and fresh black pepper
- 2 lemongrass stems
- 200 g red snapper fillet
- 1 Tbs Olive oil
- 0.25 cup Cilantro leaves, washed, disinfected and chopped
- 4 Tbs caramelized sunflower seeds

1. Peel the oranges and supreme them, keep the supreme to the side. Squeeze the juice out of the centers in a bowl and add ginger, lime juice, salt and pepper. Mix until fully incorporated. Remove the stringy parts of the lemongrass stems and finely chop the soft stems (the paler part). Add to the bowl with the dressing.
2. Slice the red snapper in very thin slices. Lay on a large plate with the orange supremes and onion.
3. Drizzle generously with the citrus dressing and olive oil; sprinkle with cilantro and caramelized sunflower seeds.
