Ingredients

- 2 cup Superfine blanched almond flour, (not almond meal)
- 0.25 cup Arrowroot flour/starch
- 1 tsp cream of tartar
- 1 tsp Cinnamon
- 0.5 tsp fine sea salt
- 0.5 tsp Baking soda
- 1 cup Bananas, (mashed, about 2-3 bananas per cup)
- 2 Large eggs, at room temperature
- 0.25 cup Pure maple syrup, at room temperature
- 1 tsp Vanilla extract
- 0.5 cup dairy-free/Paleo chocolate chips
- 0.5 cup Walnuts, chopped, toasted

Directions

1. Heat the oven to 350°.
2. Line a muffin pan with muffin cups.
3. In a large bowl, whisk the almond flour, arrowroot, cream of tartar, cinnamon, salt and baking soda.
4. In a medium bowl, whisk the mashed bananas, eggs, maple syrup and vanilla extract.
5. Stir the wet ingredients into the dry ingredients until fully blended. Stir in the chocolate chips and walnuts.
6. Using a 1/4-cup cookie scoop or measuring cup, divide the batter evenly into the muffin cups. Add a few chocolate chips and/or walnuts on top of each muffin, if you want.
7. Bake the muffins for about 20-25 minutes, rotating the pan halfway through baking time. Let cool for at least 30 minutes. Then enjoy!
