- 1.25 c All purpose flour, sifted
- 1 c Sharp cheddar cheese
- 1 tbsp chipotle powder
- 2 tbsp whole milk
- 1 c ice cold water
- 4 tbsp salted butter
- Kosher salt, for topping

Prepare the Dough
1. Add the flour and chipotle powder to a large bowl.
2. Grate in your frozen butter and mix until you get a clumpy consistency, almost like sand.
3. Mix in the cheese.
4. Form a well in the center of your bowl.
5. Add the milk into the center and mix in the dry ingredients.
6. Gradually add in cold water a little at a time and knead until you get a smooth ball of dough.
7. Wrap in plastic wrap and refrigerate for an hour.
Prepare for Baking
1. Preheat your oven to 375 degrees.
2. Line two baking sheets with parchment paper.
3. Lightly flour your work surface.
4. Roll the dough out into a large rectangle.
5. Cut your dough into square shapes about an inch thick.
6. Poke holes in the center of each square.
7. Add the pieces to the baking sheets and sprinkle kosher salt onto them.
Baking and Serving
1. Bake for 17 minutes or until golden brown and crispy.
2. Allow some time to cool to give the crackers time to develop their crunch.
3. Serve and enjoy.
