- 2 lbs ground chicken
- ham
- Swiss cheese, or good melting cheese, as needed
- 1.5 tbsp chicken bouillon powder
- 0.5 tbsp Garlic powder
- 1 tsp Onion powder
- lumpia wrapper
Dijon Dipping Sauce
- 1 c Sour cream
- 2 tbsp Dijon mustard
- Salt, to taste
- 2 tbsp Parmesan cheese, grated
- 1 tsp Garlic powder
- 1 tsp Black pepper

Preparing the Chicken Filling
1. Put the ground chicken in a bowl and add the bouillon powder, garlic powder, and onion powder.
2. Mix until well combined and set aside.
Preparing the Lumpia Wrappers
1. Take some lumpia wrappers and cut in half diagonally to make a triangle.
2. Keep these and the whole lumpia wrappers underneath a towel to keep them from drying out.
Assembling the Lumpia
1. Place the whole wrapper down in a diamond shape.
2. Place the cut triangle wrapper on top with the point facing away from you.
3. Add about 2 tablespoons of the chicken on the triangle and spread it out.
4. Place the ham and cheese next on top of the chicken.
5. To wrap, fold the two sides of the triangle towards each other.
6. Bring the top point down toward the other two.
7. Then fold that in half.
8. Place that a quarter of the way into the whole wrapper.
9. Take the bottom point of the whole wrapper, and fold it over the chicken.
10. Slightly roll to just about the middle.
11. Fold the side corners in and tuck under the smaller wrapper.
12. Add some chicken on the top corner to add as glue.
13. Roll the lumpia all the way to the end to complete.
Frying the Lumpia
1. Fry the lumpia at 325*F until golden brown.
2. Some cheese will leak out depending on how well you rolled the lumpia.
Preparing the Dipping Sauce
1. For the dipping sauce, just add everything together and mix until well incorporated.
2. Season with salt to taste.
Serving Instructions
1. When dipping in the sauce, remember it’s a dip and not a dunk.
2. A little sauce goes a long way for this.
3. Best served warm while the cheese is still gooey.
