- 1 lb gnocchi
- 4 tbsp Extra virgin olive oil
- Onion, small, finely chopped
- 8 Garlic, chopped
- 1 tbsp Tomato paste
- salt and pepper, to taste
- 1 tsp Dried thyme
- 1 tsp Dried basil
- 2 c grape tomatoes
- 2 c Baby spinach
- 1 tbsp sun dried tomatoes
- 0.5 c broth
- 0.5 c Cream
- 0.5 c shredded mozzarella cheese
- Fresh basil leaves, to garnish

1. In a pan add olive oil.
2. Once hot, add chopped onions.
3. Cook for a couple of minutes before adding in the chopped garlic.
4. Stir it around for another minute or two.
5. Then add the tomato paste.
6. Mix it well and add the broth. You can use any kind of broth. I had chicken so used that.
7. Now add the salt, spices and tomatoes.
8. Cover for 5 minutes.
9. Uncover and crush them with the back of the spoon.
10. Occasionally stir for 5 minutes.
11. Take a bunch of spinach and break it apart with your hands.
12. Cook for 3-4 minutes or until wilted.
13. Then spoon in some sun dried tomatoes.
14. Next add in the cream.
15. Mix and let it simmer for 5 minutes.
16. While that simmers, boil some gnocchi.
17. Shouldn’t take more than 5 minutes for it to start floating on top.
18. Gently drain and add it in to the tomato sauce.
19. Stir and add sprinkle some cheese, fresh basil.
20. Cover for a couple of minutes.
21. Once the cheese is melted, it’s ready to be served.
22. Enjoy!
