- 375 grams Bread flour
- 7 grams Salt
- 225 grams Water
- 55 grams Butter, melted
- 225 grams Butter, for rolling
- 100 grams Cheddar cheese, grated
- 1 tsp Rosemary
- 1 tsp Dried thyme

1. For the puff pastry, take the 225g of butter and roll it out into a square. let rest in the fridge while you prepare the rest of the dough.
2. Mix the first 4 ingredients together until they combined and knead into a ball. Let rest in the fridge for 30 minutes.
3. Roll out the dough into a square and place the butter square in the middle. Cover the butter with the dough and roll out gently into a flat rectangle. Fold dough like brochure. Let rest in the fridge. Repeat 4 times.
4. Once ready to use, thinly roll out the dough and cut into squares. Add grated cheese, rosemary and thyme in the middle of the dough. enclose by folding it in half with egg wash and sealing with a fork.
5. Brush with egg wash on top of the pastries and top with some cheese. Bake at 375F for 15-20 minutes. serve immediately.
