Basil Pesto
- 3 c Basil leaves, fresh
- 3 clove Garlic
- 1 c Cashews
- 1 tsp Salt
- 0.5 c Parmesan, freshly grated
- 0.5 c Extra virgin olive oil
- 2 sun dried tomatoes
- 1 packet fusilli pasta

For the pasta
1. Place a pot on a flame filled halfway with water and 2 tbsp of salt.
2. When it comes to a boil, add your pasta and cook until al dente.
For the pesto
1. In a mixer, add fresh basil leaves, cashews, garlic cloves, salt, and fresh Parmesan. If your cashews are salted then omit the salt.
2. Start pulsing until halfway done. Now slowly add olive oil until the consistency becomes smooth.
For the final assembly
1. Add desired amount of pesto to your pasta.
2. Cover it completely and add sun-dried tomatoes for the chew and extra layer of flavor.
3. Sprinkle more freshly grated Parmesan and finally garnish it with basil leaves.
