- 1 lb Pancetta, or bacon, finely diced
- 4 Eggs
- 2 Eggs, separated, yolks only needed
- 2 Tbs Extra virgin olive oil
- 1 lb linguine
- 2 Tbs Kosher salt
- 1 Tbs truffle salt
- 0.75 cup pecorino romano cheese
- 0.5 cup pasta water

1. In a large non-stick skillet, add 1/2 cup of olive oil to a pan.
2. Once the pan gets nice and hot, add pancetta.
3. Season pancetta with truffle salt and cook until crispy.
4. Remove pancetta from the pan leaving behind 1 tbsp of the grease.
5. Boil water and add salt and 1 tbsp.of olive oil.
6. Add linguine noodles and boil to al dente reserving 1/2 cup of the pasta water.
7. In a large bowl, add eggs and pecorino cheese. Mix and gradually add pasta water to the mix.
8. Add egg mixture to the warm noodles and mix repeatedly. Use pasta water to loosen the sauce if necessary.
9. Add pancetta and mix thoroughly.
10. Garnish with remaining cheese.
11. Serve immediately!
