- 1.5 c mashed sweet potato
- 0.5 c nut or seed butter
- 0.25 c Cocoa powder
- 0.333 c date paste
- 1.5 tsp Baking powder
- 1 tsp Vanilla extract
- 3 tbsp Coconut flour
- pinch Salt
- 3 tbsp plant milk
- 0.333 c Walnuts, optional

Directions

Preparation
1. Preheat the oven to 350 F.
2. Add all the ingredients except for walnuts to a food processor.
3. Process until combined. Add small amounts of almond milk if too thick.
4. Cookie dough should be scoopable, but not dry. Mix in walnuts.
5. Using a 2-3 tbsp cookie scoop, roll into balls. Gently press or leave mounded for a domed shape.
Baking
1. Bake for 10-12 minutes.
