Chicken Recipe
- 1 chicken
- 2 tbsp Chicken seasoning
- 2 tbsp Porcini seasoning
- 1 tbsp Kosher salt
- 0.5 tbsp Black pepper
- 2 tbsp Avocado oil
- 2 tbsp Butter
- 2 c Chicken Broth
- 10 pearl onions
- 0.5 Lemon, juiced fresh

Preparing and Seasoning the Chicken
1. Drizzle avocado oil on both halves of chicken.
2. Season your chicken with chicken seasoning, porcini seasoning, kosher salt and black pepper.
Cooking the Chicken
1. Heat your cast iron skillet or Dutch oven to medium-high heat about 375° F.
2. Once your skillet is hot, add butter and chicken halves.
3. Sear chicken halves on each side until golden brown.
4. Once your chicken is seared, remove it from the heat.
Preparing the Sauce
1. To the same skillet add pearl onions, and let them cook for 2 minutes before adding your chicken broth and lemon juice.
2. Give everything a good stir.
3. Once the broth is bubbling, add chicken skin side up back to the pan.
4. Tent cover and cook in the oven for 30-35 min until the internal temperature reaches 165F. Checking the thigh is the best part.
Resting and Serving the Chicken
1. Let your chicken rest for 10 minutes before cutting into it.
2. Serve with your favorite side dish and enjoy.
