Crumb Topping
- 3.5 tbsp Butter, melted
- 0.5 c light brown sugar
- 0.333 c Flour
- 1 tsp cinnamon powder
Cake Batter
- 0.75 c Sugar
- 1 tbsp cinnamon powder
- 4 tbsp Olive oil
- 1 Large egg, beat until pale and fluffy
- 0.5 c Milk
- 1 c plain flour
- 2 tsp Baking powder
- 0.5 tsp Salt
- 0.5 c Blueberries, fresh
- 0.5 c Raspberries, fresh

1. Preheat the oven to 350 degrees.
Crumb Topping Preparation
1. Take a small bowl and make the crumb topping.
2. Make sure to add the brown sugar in the end to get this perfect crumb consistency.
Cake Batter Preparation
1. Now whisk all the cake ingredients in an electric/ hand mixer for that airy consistency.
2. Now gently fold the berries into the batter with a silicone spatula so they don’t fall apart.
Assembling the Cake
1. Pour the batter on a parchment sheet 9’ cake pan.
2. Add bunch of extra fresh berries on top before adding the crumb topping.
Post-Baking Instructions
1. Once out the oven, let it cool on a cookie sheet for at least 30 minutes before sprinkling on some powdered/ confectionery sugar.
