- 2 c Rice
- 2 tbsp Onions
- 1 tbsp Onions, for later
- 2 Onions
- 1.75 lbs beef
- 0.5 Tomato paste
- 0.5 c wine
- 1 c beef broth
- 2 c water
- 1 packet S&B Hayashi Rice block
- 1 packet shimeji mushrooms
- 2 tbsp Ketchup
- 3 tbsp Bulldog Katsu sauce
- 3 tbsp Soy sauce
- 3 Eggs

Directions

1. Wash 2 cups of rice until the water runs clear and cook in the rice cooker.
2. Thinly slice onions, the thinner the better for caramelizing.
3. Heat up a pot on medium high heat and caramelize onions for 15-20 minutes until brown. Be sure not to burn them, lower the heat if needed.
4. Once browned, add in beef.
5. Pour in tomato paste, wine, beef broth, and water. Mix everything until well combined. Bring to a boil.
6. Once boiling, lower the heat and add in the Hayashi Rice block. Let the mixture simmer for about 10 minutes.
7. Season with ketchup, katsu sauce, and soy sauce. Add in mushrooms and butter. Let it simmer once more while preparing the eggs. The longer it sits, the better!
8. Whisk 3 eggs really well and pass through a sieve.
9. Heat up a medium high heat pan and let the eggs slowly cook while bring the sides of the egg inwards. Lower the heat if needed, if you prefer the eggs more undercooked!
10. Assemble with the rice, eggs, and hayashi sauce. Enjoy!
