Ingredients

Shortbread Crust
- 1 c Unsalted butter, melted; 2 sticks/16 tbsp
- 0.5 c Granulated sugar, 100 g
- 1 tbsp Vanilla extract
- 2 c all-purpose flour
- 0.75 tsp Salt
Matcha Brownies
- 0.5 c Butter, 1 stick/8 tbsp
- 0.5 c white chocolate chips
- 0.25 c Brown sugar, packed; 50 g
- 0.333 c Granulated sugar, 66 g
- 2 Eggs
- 1 tsp vanilla
- 2 tbsp matcha
- 0.75 c all-purpose flour
- 0.5 tsp Salt
- 0.5 tsp Baking powder
Toppings
- 3 tbsp Chocolate, melted (milk, dark, or white)

Directions

Shortbread crust
1. Preheat the oven to 350°F/177°C. Grease the bottom of a 8×8 baking pan and line with parchment paper.
2. In a large bowl, whisk together the 1 c melted butter, 1/2 c sugar, and vanilla until smooth.
3. Use a wooden spoon or rubber spatula to mix in the 2 c flour and 3/4 tsp salt.
4. Evenly press the dough into the baking pan. Using a fork, poke holes throughout the top.
5. Bake for 20-25 minutes, or until lightly golden brown. Set aside while you make the brownie mix.
Matcha brownies
1. In a medium microwave-safe bowl, heat the 1/2 c butter and 1/2 c white chocolate, stirring every 30 seconds until melted. This may take between 1-2 minutes total.
2. In a large bowl, add in the melted butter and white chocolate mixture. Whisk in the 1/3 c granulated and 1/4 c brown sugar until incorporated. It might be a bit lumpy, but that's okay!
3. Whisk in 2 eggs and 1 tsp vanilla until smooth.
4. Add 2 tbsp sifted matcha powder, whisk until completely combined.
5. Stir in the 3/4 c all-purpose flour, 1/2 tsp salt, and 1/2 tsp baking powder.
6. Spread the matcha brownie batter on top of baked shortbread crust.
7. Tip: Use an offset spatula or the flat end of a bench scraper to evenly spread the batter on top.
8. Bake for 30-35 minutes, or until a toothpick/cake tester comes out mostly clean with a few crumbs. Remove from oven and let fully cool in pan before removing.
Decorating
1. Slice brownies into as many servings as you want.
2. Dollop melted chocolate on the tops of each brownie. You can use a spoon or piping bag.
3. Top the melted chocolate with shortbread bear cookies. The chocolate should harden after a few minutes.

Notes
1. Store these cute brownies in an airtight container at room temperature for up to a week!
