Ingredients

Rigatoni
- 8 oz Rigatoni, or pasta of choice
- 1 Avocado, ripe
- 1 c Spinach, packed
- 1 Lemon, juiced
- 1 tbsp Olive oil, optional
- 0.5 tsp Salt, or to taste
- 0.5 tsp Pepper, or to taste
Garnish
- 1 c Cherry tomatoes, halved
- 1 c Basil, chopped
- 0.25 c Nutritional yeast

Directions

To start
1. Cook your pasta al dente and save some of the salted cooking water.
Creating the creamy avocado sauce
1. Blend together avocado, spinach, lemon juice, salt, and pepper in a food processor.
2. For extra creaminess, stream in some olive oil at the end.
Combining the pasta and sauce
1. Once the sauce is ready, lightly heat it up in a pan and add the pasta and some of the cooking water.
2. Be sure to coat the pasta well with the sauce.
Optional garnish
1. Add cherry tomatoes, fresh basil leaves, and nutritional yeast.
