- 2 Tbs Vegetable oil
- 500 g prime ribs
- 1 Star anise
- 0.5 stick Cinnamon
- 2 Tbs Ginger, chopped
- 2 Shallots, chopped
- 2 red peppers
- 1 cup rice vinegar or water
- 2 Tbs Brown sugar
- 2 Tbs hoisin sauce
- 3 Tbs Soy sauce, low sodium
- 2 Tbs Apple cider vinegar
- 2 cup steamed white rice
- 0.25 cup Cilantro, washed and disinfected

1. Heat two tbsp of oil in a pressure cooker and sear the ribs on all sides. If needed, do this in batches so you don’t overcrowd the pot. Remove the ribs from the pot and add more oil, if necessary.
2. Add star anise, cinnamon, ginger, shallot, garlic and peppers. Cook while constantly stirring for a minute or until fragrant. Pour int water, sugar, sauces, vinegar and mix well. Return the ribs into the pot, bone-side up. Cover with water and put the lid on.
3. Pressure cook for 40 minutes or up to an hour and a half if you’re using a normal pot. After 40 minutes, release the steam from the pressure cooker and open it.
4. Simmer for 15 minutes more or until the sauce is reduced and thick. It should cover the back of a spoon without slipping off.
5. Serve the ribs over a bed of steamed rice and garnish with fresh cilantro.
6. Share and enjoy.
