Leftover Rice and Bean Stew
- 2 c White rice, cooked/leftover
- 1 c bean stew
- 1 tbsp Avocado oil
- 0.25 c Onions, diced
- 0.25 c bell pepper
- 0.25 c Cilantro, chopped
- 0.5 c ripe cooked plantain
- 0.25 c ham

Directions

Stir Fry Preparation
1. In a large pan, add a bit of oil and stir fry the garlic, onions, bell peppers, cilantro, plantains and ham, on high heat.
2. Cook for 1-2 minutes until they start to brown.
3. Add the rice and beans, and mix well.
4. Reduce heat, cover and allow all the ingredients to warm up and bring the flavors all together.
5. After 5 minutes, mix well and check on the flavor.
6. At this point, decide if any other ingredients or seasonings are needed.
Serving Instructions
1. After it's warm, serve and top with fresh cilantro.
2. Enjoy with a slice of avocado and/or side salad.
