Main Ingredients
- 1 cauliflower, cut into florets
- 3 Potatoes, peeled and cubed
- 1 Onion, finely diced
- 2 clove Garlic, finely diced
- 1.5 inch Ginger, peeled and grated
- 1 green chili
- 3 tbsp Oil, for frying
- 1.5 c Tomato sauce, or chopped tomatoes
- 1 c cashew cream
- 1 tsp Cumin seeds
- 1 tsp Coriander
- 1.5 tsp garam masala
- 0.75 tsp Turmeric powder
- 0.5 tsp Salt, or to taste
- 1 c Cilantro leaves

Preparation of vegetables
1. Start by heating oil in a pot and frying cubed potatoes until they are halfway cooked.
2. Then add cauliflower, salt, turmeric, and roast until the vegetables are tender.
3. Remove from the pot and set aside.
Preparation of sauce and final steps
1. In the same pot, heat oil again and toast the cumin seeds.
2. Add finely diced onion, garlic, ginger, and the rest of the spices.
3. Add chopped tomatoes or tomato sauce, coconut milk or cashew cream, and your cooked cauliflower and potato mixture.
4. Coat well with the sauce, and garnish with cilantro leaves.
5. Serve with basmati rice and/or naan.
