- 200 grams Spinach, fresh spinach, not frozen
- 1 Garlic clove
- 1 tbsp Salt
- 110 ml Olive oil, 100 to 120ml, add gradually to reach desired texture
- Fresh lemon juice, from half a lemon
- 1 handful Walnuts, or pine nuts, up to you!
- 4 tbsp Parmesan cheese, grated (optional)

1. Wash the spinach.
2. Throw all ingredients in your blender or food processor. If your are using parmesan, add it and only after blending and tasting add salt if needed because the cheese is quite salty by itself.
3. Blend for 3-4 minutes on high speed. Add more oil if needed to get the desired creaminess, and blend.
1. Store in a jar and cover the top with a layer of olive oil. Store for up to a week in your fridge.
