Crushing and Mixing Ingredients
1. With the help of a mortar and pestle, crush garlic and red chilies. Set it aside.
2. In a bowl, mix fish sauce, dark soy sauce, and oyster sauce.
Preparing the Noodles
1. Bring a pot of water to a boil. You will need enough water to fully submerge the noodles.
2. Once the water is boiling, turn off the heat and add your rice noodles to the pot.
3. Let the noodles soak for about 5-7 minutes or until they are tender but still slightly firm.
4. Remove the water and rinse it with cold water.
5. Add a tablespoon of oil so they don’t stick together while waiting to be cooked.
Cooking the Dish
1. In a hot wok, add oil and splash fry crushed garlic/chili for 30 seconds.
2. Add shrimp and cook until it changes color. Don't overcook.
3. Then add bok choy and also cook it for 30 seconds only.
4. Now add the noodles to the mix.
5. Pour the sauce and stir constantly but gently. You don’t want the noodles to break apart.
6. Finally, add Thai basil and serve immediately. It’s that simple.
