- 3 lbs short ribs
- salt and pepper, to taste
- 1 Onion, large, chopped
- 3 Carrots, chopped
- 3 Celery stalks, chopped
- 6 cloves Garlic
- 2 tbsp Tomato paste
- 2 tbsp soya sauce
- 5 cups bone broth
- 4 sprigs Thyme
- 2 sprigs Rosemary
- 0.25 cup Olive oil
- Chives, chopped

Directions

Seasoning and Searing the Beef Short Ribs
1. Generously season beef short ribs with salt.
2. Don't season it with pepper or it will burn when searing.
3. Let it sit with salt for at least an hour (best overnight).
4. Now sear it with some olive oil from all sides and set it aside.
Cooking the Mirepoix and Preparing the Ribs
1. In the same pot, cook mirepoix with garlic for 5 minutes.
2. Then add tomato paste and mix it well.
3. Place in the short ribs and season it with pepper.
4. Pour in the beef broth with sprigs of thyme and rosemary.
5. Combine well and let it cook in the oven for 3 hours on 300F.
6. You can also pressure cook it for 30-40 minutes.
Preparing the Gravy
1. Once out of the oven, remove the ribs and blend the mirepoix and beef broth.
2. Pour the liquid through a strainer.
3. Discard the solids and add the liquid back in the pan.
Adding the Secret Ingredient and Final Cooking
1. Pour the soya sauce, which is the secret ingredient.
2. Place the ribs back in the gravy.
3. Mix it and simmer it for 10 more minutes.
Serving the Dish
1. Serve the ribs over garlic mashed potatoes and generously drench it with the gravy/sauce.
2. Sprinkle some chives for final touches.
