Ingredients

Chicken Wings
- 2 lbs Chicken wings
- 2 tbsp Mirin
- 1 tbsp Kosher salt
- 2 tsp White pepper
- 1 tsp Ginger, grated
- 1 tsp Garlic, grated
- 0.5 c All purpose flour
- 1.5 c Corn starch
- 1 tbsp chicken bouillon
- 0.5 tsp Garlic powder
- 0.5 tsp Onion powder
- 1 tbsp Black pepper, course ground
- 2 clove Garlic, sliced
- 1 Jalapeño, sliced
- 1 red Fresno chili
- 0.5 White onion, sliced
- Oil, for frying (Duck Fat)

Directions

Preparation of Chicken Wings
1. Preheat oil to 350 degrees F.
2. Place cleaned chicken wings in a bowl along with mirin, 1/2 tablespoon kosher salt, 1 teaspoon white pepper, grated garlic, and grated ginger.
3. Mix until wings are coated and set aside.
4. In a separate bowl, add flour, corn starch, remaining kosher salt and white pepper. Whisk together until combined.
5. Coat chicken wings in flour dredge and set on wire rack to rest for 10-15 min.
6. Carefully place wings into preheated oil and fry until golden brown and internal temperature has reached 165 degrees F.
Stir Fry and Seasoning
1. Place 1 tablespoon of frying oil in a wok over medium heat. Add jalapeños, fresno chilis, onions, and garlic. Stir fry for 1 min.
2. Add in chicken wings and stir fry for 1 additional minute.
3. Add chicken bouillon, black pepper, onion powder, and garlic powder and stir fry for 30 seconds until wings are coated.
4. Remove from heat and serve with your favorite dipping sauce.
