Ingredients

Shrimp Stir Fry
- 1 lb Large shrimp, shell-on with heads and deveined
- 0.5 c Cornstarch
- 4 c Oil, for deep frying
- 2 tbsp Oil, for stir frying
- 2 tbsp Garlic, minced
- 1 Scallion, sliced
- 1 Red pepper, sliced
- 1 serrano pepper
- 2 Thai chili peppers
- 0.5 tsp Salt
- 0.5 tsp White pepper

Directions

Preparation of Shrimp
1. Rinse the shrimp under cold water and pat dry.
2. Use kitchen shears to trim off the legs and other sharp points.
3. Cut the back of the shrimp open and devein.
4. Drench the shrimp in cornstarch.
5. Heat oil to 375F and fry the shrimp for about 1 minute until golden brown.
6. Transfer them onto a paper towel-lined plate.
Final Cooking and Serving
1. Add oil to a wok over medium heat.
2. Add garlic, scallions, and peppers.
3. Stir for 30 seconds until fragrant.
4. Turn off the heat and add the fried shrimp.
5. Season with salt and white pepper.
6. Toss to mix everything and serve.
