For the mushrooms
- 0.5 lb Oyster mushrooms
- 2 tbsp Olive oil
- 1 tbsp Soy sauce
- 2 clove Garlic, finely chopped
- 1 tsp Paprika, smoked
- 0.25 tsp Black pepper, cracked, or to taste
For the caramelized onions
- 1 tbsp Olive oil
- 2 red onions
- 0.5 tsp Salt
- water, as needed
For serving
- 2 brioche buns
- 0.5 c pickled red cabbage
- 1 c mixed lettuce
- 1 Tomato, large, sliced
- 1 c pickled cucumber
- 2 tbsp Ketchup
- 2 tbsp Mayonnaise, vegan

Directions

Preparing the mushrooms
1. Pull them into thin strips and add the marinade ingredients, then massage well.
Caramelizing the onions
1. Peel and slice the onions and cook them in a pan with olive oil and salt for around 30 minutes until they become dark and sticky.
Sautéing the mushrooms
1. In a separate pan, sauté the marinated mushrooms until they are nicely seared.
Assembling the burger
1. Toast the brioche bun and spread vegan mayo on the bottom bun.
2. Add lettuce, tomato, the cooked mushrooms, ketchup, and pickles.
3. Enjoy!
