- 8 clove Garlic
- 1 ginger root
- 3 jaggery
- 4 c water
- rice noodles
Whole Spices
- 1 tbsp Coriander seeds
- 1 cinnamon stick
- 1 tbsp Fennel seeds
- 4 Star anise
- 2 black cardamom
Final touches
- Thai basil
- Cilantro leaves, finely chopped
- White onion, thinly sliced
- bean sprout
- Lime

Directions

Preparing the Broth
1. In a large pot, add 1 large yellow onion, chicken, fish sauce, and whole spices.
2. Traditional recipes require rock sugar but since I only had jaggery (tell me you're desi, without telling me you're desi)! I added that as well.
3. Also add the water and let it simmer for 45 minutes on a medium heat.
4. Let it completely cool down so the flavors have the chance to enhance. Believe me, the umami flavor will be off the charts!
5. Usually, you add more fish sauce after cooking but I didn’t feel the need. But go ahead if that’s what you prefer.
