- 0.5 c Olive oil
- 2 tbsp Butter
- 0.5 Yellow onion, medium
- 1.5 c Arborio rice
- 3 Portabella Mushrooms
- 0.25 c Heavy cream
- 6 c Vegetable stock
- 1 tbsp Truffle Oil
- 1 tsp Kosher salt
- 1 c water
- Parsley, handful

Boiling the broth
1. In a pot, boil the broth. You can also use chicken broth instead of vegetable.
Frying the mushrooms
1. Add 2 tbsp of olive oil and a tbsp of butter in another pot.
2. Add mushrooms and fry until lightly golden and crispy. Set aside.
Preparing the rice
1. In the same pot, add the rest of the olive oil and onions to fry for 5 minutes on medium heat.
2. Add crushed garlic to the mix. Cook for a couple of minutes.
3. Now add rice. Cook until slightly toasted.
4. Add a cup of water and let it completely dry.
Adding the broth
1. One by one, add ladles of broth to the rice.
2. Wait for the rice to soak in the broth before adding more.
3. Repeat the process until the rice becomes "Al Dante.
4. Then add cream.
5. Add a pinch of salt if needed.
6. Then add chopped parsley and fried mushrooms.
7. Give it a last mix.
Plating the dish
1. Once you're ready to plate it, add crispy mushrooms on top.
2. Pour some truffle oil along with some parsley to garnish.
3. There you have it! The best risotto you ever tasted. Enjoy!
