Ingredients

For the meatballs
- 1 cup Lentils, cooked
- 1 cup Oatmeal
- 0.5 Onion, finely chopped
- 0.25 cup Parsley, washed, disinfected and chopped
- 0.25 cup Basil, washed, disinfected and chopped
- 1 tsp Tomato paste
- 1 tsp Paprika
- 1 pinch salt and pepper
- 2 Tbs Parmesan cheese, grated
- 0.25 cup Breadcrumbs
- 1 Tbs Olive oil
- 1.5 cup Tomato sauce
To serve
- 400 g Spaghetti, cooked al dente following pack instructions.
- 2 Tbs Basil, washed, disinfected and chopped
- 2 Tbs Parmesan cheese, grated

Directions

For the meatballs
1. Quantities below are for original serving size of four.

Mix all the ingredients up to the breadcrumbs in a food processor and pulse 3 or 4 times ti integrate, careful not to over-blend it, making the mixture less malleable.
2. Heat a tbsp of olive oil in a pan and sear the meatballs in batches until they are completely browned. Return all the meatballs to the pan, pour the sauce and bring to a boil. Keep warm to the side.
To serve
1. Split the pasta in 4 plates and serve meatballs with sauce on top. Sprinkle with parmesan cheese and basil.
2. Share and enjoy.
Tip:
1. If you feel the mixture is too dry, you can add a tbsp of chia with water to humidify it without loosing consistency.
