- 1.5 c Cherry tomatoes, quartered
- 1 tbsp Extra virgin olive oil
- 1 Lime, juiced
- 0.5 c Cilantro, chopped
- pinch Salt
Nacho Cheese Sauce (Vegan)
- 1.5 c cashew nuts
- 1 Yellow bell pepper, roughly chopped
- 0.333 c Nutritional yeast
- 2 tbsp Apple cider vinegar
- 0.5 tsp Turmeric
- 1 tsp Smoked paprika
- 0.5 tsp Salt, or to taste
- water, as needed

Directions

Preparation
1. To begin, soak the cashew nuts for the sauce while you cook the rice, grill the corn, and prepare the rest of the ingredients.
2. Once the cashews are ready, blend all the sauce ingredients together with just enough water to create a creamy dressing.
