Ingredients

Main Ingredients
- 45 g glutinous rice flour
- 10 g Corn starch
- 30 g Sugar
- 50 g blueberry
- 80 g Milk
- 10 g Oil
Filling
- 50 g blueberry
- 4 tbsp Sugar
Whipping Cream
- 0.25 c whipping cream
- 2 tbsp Sugar

Directions

Blending Blueberries and Milk
1. In a blender, add 50g blueberries and milk.
2. Blend until smooth and filter if needed.
3. Measure 6 and 1/2 tablespoons and keep it aside.
Preparing the Dough
1. In a pan, add glutinous rice flour, corn starch, sugar and the 6.5 tablespoons blueberry milk.
2. Mix until combined.
3. Add oil/butter and mix until combined.
4. Mix and cook on medium heat until soft dough is formed.
5. Let it cool a bit.
Preparing the Blueberry Jam
1. Meanwhile, add 50g blueberries and sugar in a pan.
2. Mash it using a fork while cooking it on medium heat.
3. Cook until it thickens and forms jam.
4. Keep it aside.
Whipping the Cream
1. In a bowl, add cold whipping cream and sugar.
2. Whip it until stiff peaks are formed.
Kneading and Filling the Mochi
1. Use hand gloves and knead the warm mochi until stretchy.
2. Dust corn starch and flatten the mochi.
3. Add whipped cream and blueberry jam in the middle.
4. Cover it with more whipped cream.
5. Cover and pinch the mochi together and cut off the excess.
6. Dust corn starch to prevent sticking.
7. Transfer and garnish if needed.
8. Enjoy!
