Ingredients

Ingredients
- 5 large potatoes
- 2 Chicken breast, baked or boiled and finely chopped
- 1 tbsp dried oregano leaves
- 1 tsp Dried thyme
- 2 oz Gouda cheese, shredded
- 2 tbsp Breadcrumbs
- 3 tbsp Allegro Garlic and Herb Seasoning
- 1 Small onion, part of veggie mix
- 1 green chili
- 3 clove Garlic, part of veggie mix
- 1 sun dried tomato
- 0.5 c Parsley, part of veggie mix
- 4 oz Mozzarella cheese, cubed
- 2 c Breadcrumbs, for coating
- 1 c Corn starch, for coating
- 2 Eggs, for coating
- Cooking oil, to fry

Directions

Preparation of Potatoes
1. Wash and boil the potatoes.
2. You can do this a day prior and let it sit in the fridge until needed.
Mixing Ingredients
1. Shred the potatoes and to it add blended chicken, breadcrumbs, cheese, dried spices and Allegro Garlic and Herb Seasoning.
2. Mix well with a spoon or spatula.
3. I like to then mix it with hand to sense the consistency and texture.
4. Once it’s to my liking, I start rolling out the balls.
Forming and Filling the Balls
1. Take scoop full and make a bowl shape.
2. Place a mozzarella cheese cube and cover it completely.
3. It should be a size of a golf ball.
4. Press it firmly so it doesn’t fall apart while frying.
Coating and Frying
1. Coat it with corn starch, egg wash and finally breadcrumbs.
2. Fry on a medium high heat for 5-7 minutes.
3. Remove from the oil and let it cool for 10 minutes before eating.
Serving
1. Enjoy it with pesto or chili mayo!
