Ingredients

- 1 400g loaf Brioche Bread
- 2 Large eggs
- 1 Egg yolk
- 5.5 cup Heavy cream
- 2 Tbs Granulated white sugar
- 2 Tbs Dark brown sugar
- 0.5 tsp Cinnamon
- 0.5 tsp Nutmeg

Directions

1. Preheat oven to 350F
2. Slice brioche bread into ½ inch pieces and add to a bowl
3. In a separate bowl, add in eggs, egg yolk, heavy cream, white sugar, brown sugar, cinnamon, nutmeg and whisk until fully combined.
4. Pour liquid mixture over bread and fold until all bread is covered. Set aside for 15 minutes to soak.
5. Spray a muffin pan with non-stick cooking spray or line with parchment paper. Fill each muffin cup with mixture and gently press down to ensure bread is to the bottom of the cup. Depending on the size of the muffin pan, this may make slightly more servings.
6. Bake for 25-30 minutes, or until the edges have set and the tops are golden brown.
